Château Capion 2005
AOC Coteaux du Languedoc
Blend:
70% Syrah, 15% Grenache, 15% Mourvèdre.
Position in Vineyards:
Exposed west, north-west.
Type of Soil:
Limestone, well-drained.
Average Age of Vines:
The oldest vines on the estate, being more than 30 years old. They give each year a very specific harvest. With years, the quantity of grapes is limited but the quality is outstanding.
Average Output:
20 hl/hectare for 3800 plantations per hectare.
Time of Harvest:
Beginning of September 2005 for all of the varieties.
Vinification Details:
Hand picked and then picked over again before and after a total scraping. A portion of the harvest is subjected to a soft pressing. Then the fermentation begins and the temperature is controlled in order that it does not rise above 26°C. We begin with the rundown, then punching and pumping daily. The soaking process runs for 28 days.
Type & Size of Oak Barrels:
Bordelais type French oak barrels. The wine is made and raised in 60% of virgin oak for 16 months.
When Bottled:
October 2007.
Maturation Potential:
2011-2013.
Winemaker’s Comments:
This is an outstanding wine. Sullen colour with dark purple glint. Intense cedar, black pepper and toast flavour. Compact and silky at the same time.
