Fiona Rouge 2006
Vin de Pays de l'Hérault
Blend:
45% Cabernet Sauvignon, 45% Merlot, 10% Syrah.
Position in Vineyards:
Exposed west, north-west.
Type of Soil:
Limestone, well-drained.
Average Age of Vines:
30 years.
Average Output:
40 hl/hectare for 3800 plantations per hectare.
Time of Harvest:
Third week of September 2007.
Vinification Details:
Hand picked with double sorting. We chill grapes before doing a cold maceration at 15°C. Then the fermentation begins, the temperature is controlled in order that it does not rise above 26°C. We begin with the rundown and then daily punching and pumping three times per day. Skin contact during 28-30 days. The wine is casked at the end of the fermentation and ages on its sediment for ten months.
Type & Size of Oak Barrels:
French oak barrels of 300 litres, first and second fill, type Bordelais.
When Bottled:
December 2007.
Maturation Potential:
2009.
Winemaker’s Comments:
Boxwood and woody nose. Sincere and coloured first tone with nutmeg, liquorice and blackcurrant flavour, continuing until a final woody tone.
This wine will perfectly combine with cooked meats, red meat and cheese.
