Le Colombier 2006
Vin de Pays de l'Hérault
Blend:
50% Chardonnay, 30% Roussanne, 20% Viognier.
Position in Vineyards:
Exposed west, north-west.
Type of Soil:
Limestone, well-drained.
Average Age of Vines:
23-26 years.
Average Output:
25 hl/hectare for 3800 plantations per hectare.
Time of Harvest:
First week of September 2007.
Vinification Details:
Hand picked grapes. After two separations begins the soaking. Then a light pressing is made. Afterwards we execute a settling during 36 hours at a temperature from 10°C to 12°C. The mix incurred is barrelled at the beginning of the fermentation process.
Afterwards, the wine ages between six and twelve months on its sediments, protected from the air in our air-conditioned wine-warehouse.
Type & Size of Oak Barrels:
French oak barrels type Bordelais, containing 40% of newness wood.
When Bottled:
November 2007.
Maturation Potential:
2011.
Winemaker’s Comments:
Expressive golden wine with a fine and delicate woody flavour. Full and thick texture, extending through exotic tones.
Ideal harmony with a sauce fish or white meat.
