AOC Coteaux du Languedoc
Blend:
60% Syrah, 20% Grenache, 20% Mourvèdre.
Position in Vineyards:
Exposed west, north-west.
Type of Soil:
Limestone, well-drained.
Average Age of Vines:
24-26 years.
Average Output:
28 hl/hectare for 3800 bottom per hectare.
Time of Harvest:
Second week of September 2005 for the Syrah and beginning of October for the Grenache and the Mourvèdre.
Vinification Details:
Hand picked; then a part of the harvest
is subjected to a soft pressing. Afterwards we make a cold pre-fermentation soaking for 72 hours. The fermentation begins slowly, during which time the temperature rises to 30-32°C maximum. We begin with the rundown, then punching and pumping daily. The fermentation of the wine runs between 28 and 30 days
Type & Size of Oak Barrels:
French oak barrels type Bordelais. The wine ages for 12 months with 40% of newness wood.
When Bottled:
November 2007.
Maturation Potential:
2009-2011.
Winemaker’s Comments:
Intense dusky red colour. Red fruit flavour, such as huckleberry and blackberry. Light and stylised with vanilla aroma. Ropy, spicy and smooth tannin texture. The final tone is menthol-flavoured.
This major Languedoc wine will combine, among other things, with elaborate meals such as roasted beef with morels or a shoulder of lamb cooked with five spices.
