Blend: 55% Roussanne, 30% Viognier, 15% Chardonnay.

Position in Vineyards: West and North West exposition.

Type of Soil: Limestone, well drained.

Average Age of Vines: 23 - 26 years old.

Viticulture Practice: Trellised. Green harvesting to regulate yields.

Yield per Hectare: 22 Hl.

Time of Harvest: 2nd week of September 2005.

Vinification Details: Hand picked with double sorting and skin contact. Low pressing and juice settled down at 10 - 12°C. The clear juice is racked after 36h and fermented in barrels. The wine stays on lees during 12 months.

Type & Size of Oak Barrels: New and 2nd fill French Oak barrels of 225 litres.

When Bottled: December 2006.

Maturation Potential: 2008 - 2009.

Winemaker’s Comments: A fine delicate nose and in the mouth the wine offers a great variety of aromas, rip fruits and spicy. Enjoy it with your best fishes, white meat and poultry with spicy sauces.
