Blend: 60% Syrah, 30% Grenache, 10% Mourvèdre.

Position in Vineyards: Exposed West North West.

Type of Soil: Limestone, well drained.

Average Age of Vines: 24 - 26 years old.

Viticulture Practice: Trellised. Green harvesting to regulate yields.

Yield per Hectare: 29 hL.

Time of Harvest: 2nd week of September for the Syrah, 3rd week of September for Grenache and Mourvèdre.

Vinification Details
: Hand picked with double sorting, before and after destemming. Parts of grapes are crushed. We chilled grapes before cold maceration, then, the temperature is going up to 30 - 32°C. Run down first and then punching and pumping over everyday. Skin Contact during 28-30 days.

Type & Size of Oak Barrels: New barrel (Burgundy size) from oak of the centre of France. Wine stayed on its lees 12 month without racking.

When Bottled: April 2007.

Apogée Prévisible: 2009 - 2011.

Winemaker’s Comments: Three Mediterranean grapes for one wine. One complete the others...Taste it and you will have a seeing of what is Chateau Capion...
