Vinification Details: Hand picked with double sorting, before and after destemming. Parts of grapes are crushed. We chilled grapes before cold maceration, then, the temperature is going up to 30 - 32°C. Run down first and then punching and pumping over everyday. Skin Contact during 28-30 days.
Type & Size of Oak Barrels: New barrel (Burgundy size) from oak of the centre of France. Wine stayed on its lees 12 month without racking.
When Bottled: April 2007.
Apogée Prévisible: 2009 - 2011.
