Blend: 60% Syrah, 30% Grenache, 10% Mourvèdre.
Position in Vineyards:
Exposed West North West.
Type of Soil: Limestone, well drained.
Average Age of Vines: Selected vines of 30 years old. A low crop but exceptional characteristic flavour.
Viticulture Practice: Trellised. Green harvesting to regulate yields.
Yield per Hectare: 24 hL.
Time of Harvest: 2nd week of September for the syrah, 3rd week of September for Grenache and Mourvèdre.

Vinification Details: Hand picked with double sorting, before and after destemming. Parts of grapes are crushed. We chilled grapes before to do a cold maceration, then, the temperature is going up to 30-32°C. Rundown first and then punching and pumping over everyday. Maceration during more than 34 days.
Type & Size of Oak Barrels: New barrel (Burgundy size) from oak of the Tronçais Forest (centre of France). Wine stayed in barrels 14 months without any racking.
When Bottled: April 2007.
Apogée Prévisible: 2011 - 2013.
